Stuffed Strawberries

Unbelievably decadent. To make this really over the top, dip them in melted chocolate after stuffing them. You can get mascarpone in Italian markets and some supermarkets. It’s similar, but much more expensive than cream cheese, which could be substituted.

Ingredients

  • 12 lg ripe strawberries with stems, rinsed and drained
  • 4 oz mascarpone cheese
  • 1 tsp sugar
  • 2 drops vanilla
  • 2 tbsp grated dark chocolate

Directions

  1. Slice top of strawberries, reserving leaves and stems. Hull a bit of the strawberries using small side of a melon baller.

  2. Beat mascarpone, sugar, vanilla and chocolate in a mixer. Stuff mixture into cavity of each berry. Top berries with stems. Serve cold.
