Ingredients

  • 2 tsp ground cumin
  • 2 tbsp paprika
  • 1 tsp black pepper
  • 1 tsp cayenne pepper
  • Crushed red pepper flakes, to taste
  • 1 tsp salt
  • 1 tbsp dried oregano
  • 1 lb. ground beef
  • 1 tsp vegetable oil
  • 2 10-inch flour tortillas
  • 2 tbsp butter, softened
  • 1/3 cup Pepper Jack, grated
  • 1/3 cup cheddar, grated
  • 1 tomato, chopped
  • 1 onion, chopped
  • Crumbled bacon, cooked
  • Canned jalapenos, chopped

Directions

  1. In a bowl, mix cumin, paprika, black pepper, cayenne, red pepper flakes, salt and oregano. In a separate bowl, add beef. Take 1 heaping tbsp cumin and pepper mixture and add into beef. Combine until well mixed.

  2. Heat oil in a large pan and add seasoned beef. Cook until nicely browned and cooked through. Remove from heat and set aside.

  3. Coat one side of each tortilla with butter.

  4. Place a skillet over medium heat. Once hot, add 1st tortilla with buttered side facing down. Add Pepper Jack and cheddar to the center of tortilla. Then, add tomato, onion, bacon, and jalapeno on top. Evenly coat everything with cooked beef then top with 2nd tortilla with buttered side facing up. Cook for about 45 seconds or more until bottom browns. Then, carefully turn quesadilla over and cook opposite side.

  5. Transfer onto a serving plate. Using a pizza cutter, divide burger into desired pieces through the center. Serve.
