Lamb Burgers with Tzatziki and Parsley Salad

Ingredients

  • 2 lbs. ground lamb
  • 1 tsp coarse salt
  • 1/4 tsp black pepper
  • 2 tsp curry powder
  • Tzatziki Sauce:
  • 2 cups Greek yogurt
  • 1 English cucumber, peeled, halved lengthwise, seeded and chopped
  • 1/4 cup chopped fresh mint
  • 1/2 tsp coarse salt
  • 1 tsp grated lemon zest
  • 1 tbsp. fresh lemon juice
  • Parsley Salad:
  • 2 medium tomatoes, chopped
  • 1 cup fresh parsley leaves
  • 1/2 medium red onion, thinly sliced
  • 2 tbsp. olive oil
  • 8 pitas

Directions

  1. Preheat a grill to high heat. Combine the lamb, salt, pepper and curry powder in a bowl. Form into 8 oblong patties. Set aside to come to room temp.

  2. Meanwhile, for the tzatziki, combine the yogurt, cucumber, mint, salt, lemon zest and juice in a medium bowl. Set aside.

  3. For the parsley salad, combine the tomato, parsley, red onion and olive oil in another medium bowl. Set aside.

  4. Put the burgers on the grill and cook to the desired doneness, about 2 to 3 minutes per side for medium-rare.

  5. Stuff the burgers, tzatziki sauce and parsley salad into the pitas and serve immediately.
