Fresh apple cake

Ingredients

  • Pan Coating:
  • 3 tbsp sugar
  • 1 tsp cinnamon
  • Cake:
  • 1.5 cups vegetable oil
  • 2 cups sugar
  • 3 large eggs
  • 3 cups peeled/chopped Granny Smith apples
  • 2 tsp vanilla extract
  • 2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 3 cups flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup chopped pecans
  • 1/2 cup raisins or coconut

Directions

  1. Preheat oven to 325F.

  2. Generously grease 10 inch tube or bundt pan. Combine sugar and cinnamon and coat the inside of the pan by shaking all around until sides and bottom are coated.

  3. Beat the oil and sugar with an electric mixer until well blended. Add the eggs one at a time, beating well after each addition.

  4. With spatula, stir in the apples and vanilla.

  5. In a separate bowl, sift the flour, baking soda, spices and salt together. Add flour mixture to apple mixture and mix with a spatula. Add pecans and raisins. The batter will be very thick.

  6. Spoon the batter into the pan and smooth the top. Lift the pan about 2 inches above the counter and drop it to work air bubbles up.

  7. ke the cake 1.5-1.75 hours until a tester inserted comes out clean.

  8. Allow to rest for 30 min in the pan before turning out onto a cake plate to cool completely.
