Amarillos (Fried Sweet Plantains)

Ingredients

  • 2-3 plantains, ripe, turning black
  • 5 Tbs butter, divided
  • 1 tsp cinnamon
  • 1 tsp vanilla
  • 2 Tbs brown sugar

Directions

  1. To peel the plantains, cut off ends and discard. Make 3 shallow slits lengthwise along the seams of the skin and peel away. Split the plantains lengthwise.

  2. Heat 4 Tbs butter in large pan over medium/low heat. Fry in a single layer until golden and turn over.

  3. Add cinnamon, vanilla, and sugar. Cook for a few seconds to carmelize sugar. Add remaining butter to sauce and serve immediately.
