WHY THIS RECIPE WORKS:
Rather than cook our Asparagus Gratin in a cheesy sauce, we opted to cook the two aspects separately and combine them at the end. We initially turned to gruyére cheese, a classic element in gratin dishes, but it caused our sauce to be slightly gritty. Replacing it with milder, smoother Monterey Jack fixed the problem. We also found that tasters preferred a version of the sauce that replaced the half-and-half entirely with vegetable stock made from the trimmed ends of the asparagus, which also enhanced the vegetable’s flavor.

WHY THIS RECIPE WORKS:
We wanted the asparagus in our Roasted Asparagus with Peppers and Shallots recipe to have lots of flavor, so we tossed the spears with a garlic and herb marinade, then cooked them (along with some peppers and shallots) hot and high to caramelize them without withering them away. If you can’t find ciabatta, a similar crusty, rustic loaf of bread can be substituted. A quarter cup of Egg Beaters may be substituted for the egg yolks. Since anchovy fillets vary in size, more than 6 fillets may be necessary to yield 1 tablespoon of minced anchovies. A combination of extra-virgin olive oil and canola oil gave our Caesar Salad dressing a neutral base. We used a rasp-style grater to turn garlic into pulp, then steeped it in lemon juice.
