A staple of Middle Eastern cuisine, this salad is a natural use for quinoa. Substitute red quinoa to add a nutty quality to the salad, or use black quinoa for a great contrast of color.

I think 1 lemon might have done it. I used 2, and it was very lemony (but also very clean tasting).

  • minced dill
  • each finely chopped basil and cilantro
  • olive oil

This salad, which resembles gazpacho, is a lovely, light way to begin a Mexican meal. Serve it atop lettuce leaves as a salad, or serve over rice. Alternately, use it as a sauce with fish, chicken or fajitas.
