English Muffin Melts

  • 4 english muffins, split
  • 2 large beefsteak tomatoes, each cut into 4 slices and seeded
  • 2 cups gruyere cheese, coarsely grated
  • 1/3 cup basil, freshly chopped
  • 1/4 cup bread crumbs, dried
  • 2 cloves garlic, minced


  1. Preheat oven to 375 degrees. Place muffin halves on baking sheet and toast until golden.

  2. Place 1 slice of tomato on each muffin half and season to taste with s&p. Bake 17-20 minutes, until tomatoes are softened.

  3. In a medium bowl, mix the cheese, basil, bread crumbs and garlic. Season to taste with s&p. Mound the cheese mixture on top of each tomato and continue baking until the cheese is melted (about 5 minutes). Serve immediately.
