Thick and Chunky Beef Chili

  • 1 T olive oil
  • 1 1/4 lbs ground beef
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 (28 oz) can crushed tomatoes
  • 2 (14.5 oz) cans fire-roasted diced tomatoes
  • 1 (15.5 oz) cans kidney beans, drained
  • 2 (1.25 oz) packages chili seasoning mix (such as McCormick Chili Seasoning Mix, Original or Hot)
  • Garnish: chopped avodacdo and finely chopped red onion


  1. In a large Duch oven, heat oil over medium-high heat. Add ground beef, onion, bell pepper and garlic to hot oil. Cook for 8 to 10 minutes or until beef is browned and crumbly.

  2. Add crushed tomatoes, diced tomatoes, kidney beans, and chili seasoning mix; bring to a boil over high heat. Cover, reduce heat, and simmer for 30 minutes. Garnish with avocado and red onion, if desired.
