Just the Best Blueberry Muffins

  • 1/2 c rolled oats
  • 1/2 c orange juice
  • 1 large egg, lightly beaten
  • 1/2 c vegetable oil
  • 1 1/2 c flour
  • 1/2 c sugar
  • 1 1/4 t baking powder
  • 1/4 t baking soda
  • 1/2 t salt
  • 1 c fresh or frozen blueberries


  1. Preheat oven to 400 degrees. Place 12 paper liners in muffin cups and set aside.

  2. Combine oats and orange juice in large mixing bowl. Beat in egg and oil. In another bowl, sift together flour, sugar, baking powder, baking soda and salt.

  3. Add to oat mixture and stir to blend. Fold in blueberries. Spoon into prepared pan.

  4. For topping: sprinkle cinnamon and sugar lightly over batter.

  5. Bake 18-22 minutes or until muffins are lightly browned on top. Makes 1 dozen.
