Potato Kale Soup with Gruyere

  • 2 tbs butter
  • 1 1/2 cups finely chopped onion
  • 1 garlic clove, minced
  • 7 cups chicken broth
  • 4 cups coarsely chipped peeled potatoes (preferably Yukon gold)
  • 1/4 tsp salt
  • 1 bay leaf
  • 6 cups chopped fresh kale
  • 1 tsp dried basil
  • 9 tbs shredded gruyere cheese


  1. Melt butter in a large saucepan over medium heat. Add onion and cook until tender. Add garlic, cook 30 seconds, stirring constantly. Stir in broth, potato, salt, bay leaf and bring to a boil. Cover, reduce heat and simmer unil potato is tender.

  2. Stir in kale and basil. Cover and simmer 10 minutes, or until kale is tender. Discard bay leaf, and partiallyl mash potatoes with a potato masher. Top with cheese and serve.
