Winter's Day Root Veggie Soup

  • olive oil
  • 2 yellow onions, chopped
  • 1 clove garlic, sliced
  • 2 lbs potatoes
  • 3-4 stalks celery, chopped
  • 1 bulb celeriac, cut in 1/2" cubes
  • 2 carrots, cut in 1/2" cubes
  • handful of fresh parsley
  • 2 boxes vegetable stock
  • 2 cups of water
  • 1 rapunzel cube
  • white pepper
  • 1 Tbs vegeta seasoning
  • 1/2-1 cup light cream
  • 2 scallions, chopped


  1. 1) Put oil in the bottom of soup pot and heat up. Add the onions and celery and saute for a couple of minutes. Add in the garlic and potatoes, the celeriac and carrots, and saute a few more minutes. Add the seasoning cube, water, and broth. Add the wh pepper, vegeta seasoning. Cook for an hour. When everything is soft, use your immersion blender to puree. Add the cream. Serve and garnish with scallions.
