Pub Potato Salad

  • 1 1/2 pounds boiling potatoes
  • 1/3 cup chopped white onions
  • 1/2 cup chopped English cucumber
  • 4 strips fried bacon, crumbled, divided
  • 2 hard-boiled eggs, shelled and chopped into large chunks
  • 1/2 cup mayonnaise
  • Lettuce leaves


  1. In a saucepan cover the potatoes with water and bring to a boil.

  2. Drain the potatoes; while they are still hot, remove the skins.

  3. In a bowl, cut the potatoes into 1 1/2 inch chunks.

  4. Add the onions, cucumber and half the crumbled bacon.

  5. Toss.

  6. Add egg and mayonnaise to the cucumber mixture and gently combine.

  7. Add salt and pepper to taste.

  8. Place the potato salad in a lettuce-lined bowl or platter.

  9. Garnish with remaining bacon.
