Categories: Beef, Mexican

  • 1 - 1 1/2 pound ground lean hamburger
  • 1/2 onion diced
  • 1 clove garlic minced
  • 1 stalk celery diced
  • 1/4 green bell pepper diced (very optional)
  • 1 heaping tablespoon chili powder
  • 1 can tomato sauce
  • 1 small can V-8 juice
  • 1 heaping teaspoon dried parsley
  • 1/4 cup ketchup
  • 2 cups small elbow macaroni

  1. NOTE: Amounts are approximate as this is something I just “throw” together.

  2. Cook elbow macaroni in boiling salted water according to package directions.

  3. In the mean time…brown ground beef in a large skillet adding rest of ingredients as you brown.

  4. Simmer while macaroni continues to cook.

  5. Drain and lightly rinse macaroni when done.

  6. Stir into meat and tomato mixture.

  7. Serve with some parmesan cheese to sprinkle on top.
