  • 2 medium onions, sliced
  • Salt and pepper
  • 4 tbsp. olive oil
  • 1 box white mushrooms, stems removed, sliced
  • 1 box frozen spinach, thawed
  • 1 lb. sliced ham or prosciutto
  • 1/2 cup shredded Parmesan
  • 8 oz. sour cream
  • 16-count package crepes


  1. Set 2 medium frying pans over medium-low heat. In one, saute the onions with salt and pepper in 2 tbsp. olive oil until sweet and golden, 15-20 minutes.

  2. In the other pan, saute the mushrooms with salt and pepper in the remaining olive oil, 8-10 minutes. Remove; set aside. In the same pan, cook the spinach until heated through.

  3. In either pan, heat each crepe for about 30 seconds a side over medium heat, as you would a tortilla. Remove and keep warm on a plate tented with foil until it’s time to serve.

  4. Serve the onions, mushrooms, and spinach in separate bowls with the ham, Parmesan, sour cream and crepes.

  5. Have each diner assemble his own crepe a the table.
