Pumpkin pancakes

Prep time: 5 minutes
Cook time: 20 minutes
Serves 5 people


  • 2 cups of your favorite dry pancake mix
  • 3 Tbsp dark-brown sugar
  • 2 1/2 tsp pumpkin-pie spice
  • 1 1/2 cups milk
  • 1 cup canned pure pumpkin puree (not pie filling)
  • 1 egg, beaten
  • 1 tsp pure vanilla extract
  • 1 Tbsp vegetable oil, plus more for the griddle Pure maple syrup


  1. Mix dry ingredients in a large bowl. Mix wet ingredients separately, then combine with dry ingredients.

  2. Pour on to greased griddle on medium-high heat. Flip when air bubbles appear and break on the surface. Cook second side until golden. Serve warm with warm syrup and butter.
