Zucchini Salsa

Ingredients

  • 5 Roma tomatoes
  • 1 medium zucchini (about 1 pound)
  • 1 medium golden zucchini (or yellow squash)
  • 1 tablespoon olive oil
  • 2 tablespoons lime juice
  • 1 teaspoon ground cumin
  • 1/3 cup fresh cilantro, minced
  • 1/4 cup red onion, minced
  • 1 jalapeno pepper, seeds and ribs removed, minced

Directions

  1. Preheat the broiler. Halve tomatoes and zucchinis. Broil until the vegetables are softened and lightly browned on both sides. Let cool.

  2. In the meantime, combine the olive oil, lime juice, cumin, cilantro, red onion, and jalapeno pepper in a non-reactive (ceramic or glass) bowl.

  3. Chop the roasted vegetables into small pieces, and mix with remaining ingredients. Add salt to taste.

  4. Cover and chill in the refrigerator for about 30 minutes.

  5. Serve with tortilla chips, snack crackers, or toasted baguette slices.
