Chicken Artichoke Pasta Salad

Ingredients

  • 1 lb linguine - prepared al dente
  • 4 chicken breasts, cooked and cut up
  • 1 can artichoke hearts (in-brine kind only), drained
  • 1.5 c. cut up green olives
  • Grated Parm Cheese
  • DRESSING:
  • 3/4 c. EVOO
  • 1/2 c. lemon juice
  • 3 chicken bouillon cubes/granules
  • 3 T. fresh parm cheese
  • 1 t. sugar
  • 1 t. oregano
  • 1/2 t. pepper
  • 3 cloves garlic, minced

Directions

  1. Shake dressing ingredients

  2. Combine pasta, olives, chicken and toss w. dressing.

  3. Garnish w/ parm cheese

  4. Serve immediately
