Red Beans aka Pinto Beans

Serve with cornbread recipe in this book. Good old farm recipe.

Ingredients

  • 1 pound pinto beans, sorted and washed
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1/2 can petite diced tomatoes (I have used the whole can and it works fine.)
  • 1 tablespoon chili powder or more to taste
  • salt & pepper to taste
  • 1 ham hock or ham bone (cut up raw bacon will do if you don't have a ham hock)

Directions

  1. Bring above to a boil, simmer…adding water as needed until tender, about 3-4 hours.
