Grab-and-Go Country Breakfast Muffin

Ingredients

  • 1 pound Sausage Fried, drained,and Crumbled
  • 6 Eggs Cooked Scrambled and Crumbled
  • 1 cup Shredded Cheddar Cheese, divided (1/3 C for top)
  • 1/3 cup Maple Syrup or Sugar (gives it a 'pancake' flavor)
  • 1/2 cup Milk
  • 2 Eggs
  • 1/4 cup Melted Butter
  • 2 1/4 cups Self-Rising Flour (2 c AP Flour, 1 tbsp Baking Powder, 1/4 tsp salt)

Directions

  1. Prep the first 3 ingredients. Set aside.

  2. In a large mixing bowl, combine the rest of your ingredients. Mix until just combined.

  3. Stir in the prepped sausage, eggs, and cheese. Make sure all is incorporated.

  4. Take lined muffin tins, and fill the muffin liners 3/4 full. Top with the reserved cheese

  5. Bake at 400 degrees F, 12-15 mins. They need to be firm to touch with a bounce back.

  6. Cool in pan about 5 minutes, then set on cooling rack. Once cool, store in airtight container or baggie. Can freeze.
