Czech Country Style Greens

This is great for any kind of greens… Mustard, Collard, Kale, Chard, even younger Beet Tops, however I am not a personal fan of the beet tops.

Ingredients

  • 1 mess of greens
  • 2-3 tablespoons bacon grease
  • 2-3 tablespoons flour
  • 1 large clove garlic sliced
  • Water and salt as needed

Directions

  1. Heat bacon grease in bottom of large pot. Add and stir in flour making a rough. Stir in sliced garlic. Adding several cups of water.

  2. Quickly add greens wilting down so you can fit them all in your pot. Adding salt to taste.

  3. Once greens are wilted make sure there is enough water for the greens to simmer in. Keep water at equal level of greens.

  4. Simmer until greens are tender. It will depend upon the type of greens as to how long it will take them to cook.
