Potato Souffle

Ingredients

  • 1 Baking Potato
  • 2 Eggs, separated
  • 1/3 cup heavy cream
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 4 tablespoons chives, finely chopped
  • 1/4 teaspoon cream of tartar
  • Salt
  • Pepper

Directions

  1. Peal and dice potato into 8 small pieces. Steam potato until soft.

  2. In a food processor, add potato, cream, salt, pepper, and flour. Blend 4 to 5 minutes until light and well whipped. Add butter and egg yolks and blend well. Beat egg whites with cream of tartar until soft peaks form. Fold into potato mixture and add chives. Transfer potato mixture into a buttered souffle dish.

  3. Preheat oven and a water bath large enough to hold souffle dish to 350 degrees.

  4. Set potato souffle in hot water bath and bake 20 to 30 minutes.

  5. Souffle will rise and turn golden brown.

  6. Serve immediately.
