Dijon Chicken

Ingredients

  • 9 oz skinless chicken breasts
  • 3 t chopped parsley
  • 2 1/4 t country dijon mustard
  • dash paprika
  • dash black pepper
  • 2 1/4 T light mayonnaise

Directions

  1. Clean and trim chicken of all visible fat.

  2. Pound chicken until 1/2 inch thick.

  3. In a small bowl, combine mayo, mustard, pepper and paprika.

  4. Place chicken in microwave-safe baking dish.

  5. Coat one side of chicken with mayo mixture and microwave on high for 3 mites.

  6. Turn chicken over and coat other side.

  7. Cook for an additional 3 minutes or until chicken is no longer pink.

  8. Sprinkle with chopped parsley.
