Hummus Dip

Ingredients

  • 1 lb chickpeas, soaked overnight in cold water to cover
  • 2-3 cloves garlic, minced
  • 2 fresh lemons, juiced
  • 1/3 c. sesame paste (tahini)
  • 2-3 tablespoons olive oil
  • 1 tablespoon fresh parsley
  • 1 tablespoon fresh chives
  • dash of paprika

Directions

  1. drain peas, rinse, and put in deep pot

  2. pour in boiling water to cover

  3. simmer over low heat 30 minutes.

  4. drain again

  5. put back in pot, cover with cold water and cook over low heat another 2 hours or until very tender. drain well.

  6. put cooked peas in processor or blender and puree until smooth.

  7. add garlic, lemon juice, tahini, oil and puree.

  8. add water or oil if seems to thick or dry

  9. should have the consistency of mayo

  10. stir in herbs and transfer to serving bowl

  11. dust top with paprika and serve iwth pita bread or crackers
