Asparagus gnocchi

Ingredients

  • 1 1/2 medium potatoes
  • 3 spears asparagus
  • 1 tbsp. lemon zest
  • 1/2 c. flour (or as needed)
  • 1/2 c. tomato sauce
  • 2 tbsp. pesto sauce

Directions

  1. Nuke asparagus 1 minute then mush

  2. Nuke potatoes 5 minutes

  3. Bring a pot of water to the boil

  4. Take out flesh and mash

  5. Grate lemon zest

  6. Mix potato, asparagus and zest and add flour until stiff

  7. Roll out into a tube

  8. Cut into half inch pieces and shape

  9. Cook in boiling water (take out 30 sec after rises to top)
