Feta Cheese with Lemon, Fresh Rosemary, and Olives

Ingredients

  • 3 tablespoons extra-virgin olive oil
  • 1 tablespoon lemon juice, fresh
  • pinch of kosher salt
  • 1/2 teaspoon ground pepper
  • 8 ounce chunk or wedge of feta cheese
  • 1 tablespoon rosemary, fresh, coarsely chopped
  • zest of 1 lemon, finely chopped
  • 1/3 cup pitted black olives
  • baguette or country bread slices or crackers for serving

Directions

  1. In a bowl, stir together the olive oil, lemon juice, salt, and pepper.

  2. Place the cheese on a serving plate and pour the oil mixture on top of it.

  3. Garnish with the chopped rosemary, lemon zest, olives, and with the rosemary sprig, if using. Serve with crusty bread slices.
