London Broil with Shiitake Mushrooms

Serves 4 people

Ingredients

  • 8 ounces fresh shiitake mushrooms
  • 1 1/2 lb. London broil or flank steak
  • 2 T olive oil, divided
  • 1 t. dried thyme
  • 1/2 t. salt
  • 1/2 t. freshly ground pepper
  • 3 cloves garlic, minced
  • 2 T chopped shallots
  • 2 cups beef broth or red wine

Directions

  1. Remove stems from mushrooms, discarding stems.

  2. Cut mushroom caps into thin slices; set aside.

  3. Brush London broil with 1 T of the oil and rub with thyme, salt and pepper.

  4. Grill steak, uncovered, over medium-high heat 6 to 8 minutes on each side or to desired wellness.

  5. Cut steak diagonally across grain into thin slices.

  6. Heat remaining 1 T oil in large nonstick skillet over medium-high heat until hot; add garlic and shallots and saute until tender.

  7. Add broth or red wine and bring to a boil.

  8. Reduce heat, and simmer 10 minutes or until reduced by half.

  9. Add mushrooms and cook 5 minutes more or until tender, stirring often.

  10. Serve with steak.
