Soft Molasses Cookies

Makes about 9 dozen plump, spongy cookies.

Ingredients

  • 6 c. flour
  • 2 T. ground ginger
  • 1 1/2 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • 1 tsp. salt
  • 1 c. solid shortening (original recipe - lard)
  • 1 c. sugar
  • 1 egg
  • 2 c. molasses (green label)
  • 2 T. vinegar
  • 4 tsp. baking soda
  • 1 c. boiling water

Directions

  1. Sift together flour, ginger, cinnamon, salt, nutmeg and set aside.

  2. Cream together shortening and sugar.

  3. Beat in egg until well blended.

  4. Stir in molasses and vinegar and dry ingredients.

  5. Dissolve soda in boiling water.

  6. Stir into dough.

  7. Refrigerate mixture overnight.

  8. With well floured hands, break off rounded teaspoons of dough and roll into balls.

  9. Place 2 inches apart on greases cookie sheet and flatten slightly.

  10. Sprinkle with some sugar.

  11. Bake at 350 degrees for 18 minutes.
