Tuscan Chicken

Ingredients

  • 6 chicken breast halves
  • flour
  • 3 tb olive oil
  • 2 c chicken peas
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 4 ripe tomatoes, chopped
  • 1 tsp cinnamon
  • 2 tb thyme
  • salt
  • pepper
  • 1/2 c black olives

Directions

  1. Dust chicken with flour. Brown chicken in 2 tb olive oil. Arrange chicken in a lightly greased 9×13 dish. Scatter drained chickpeas onto chicken.

  2. In same skillet, add 1 tb olive oil and sauté onion and garlic. Add tomatoes, cinnamon and thyme. Simmer 10 mins. Pour over chicken. Season with salt and pepper. Scatter black olives around chicken.

  3. Bake uncovered at 350 until juices run clear, 30-45 mins.
