Grilled Chicken with Charred Salsa

Ingredients

  • 1/4 cup Florida's Natural brand Premium orange juice
  • 2 tablespoons olive oil
  • 3 cloves garlic, finely chopped
  • 1/2 teaspoon salt
  • 4 chicken breasts, boneless, skinless
  • 8 ripe roma tomatoes
  • 2 jalapeno peppers, seeded
  • 2 small red onions, halved
  • 1/2 teaspoon salt
  • 2 tablespoons lime juice
  • zest of 1 orange
  • 1/4 cup chopped cilantro
  • 8 6 inch flour or corn tortillas

Directions

  1. Have coals or grill ready with hot flames.

  2. In medium bowl, stir together orange juice, oil, garlic, and 1/2 teaspoon salt.

  3. Marinate chicken for 15 minutes.

  4. Meanwhile, place tomatoes, peppers, and onions on grill rack.

  5. Grill, turning occasionally, for 5 minutes until charred.

  6. Set aside.

  7. Grill chicken breasts, turning once, for 12 to 15 minutes.

  8. Meanwhile, chop tomatoes, seeded jalapeno peppers, and onion.

  9. Scrape into mixing bowl and toss with 1/2 teaspoon salt, lime juice, orange zest and cilantro.

  10. Serve chicken breasts with warm tortillas and salsa.
