Quick & Easy Lemon Chicken & Rice

Ingredients

  • 1/2 cup KRAFT House Italian Dressing
  • 1 lb. boneless skinless chicken breasts, cut into strips
  • 1 cup chicken broth
  • 1 cup small broccoli florets
  • 1 red pepper, cut into strips
  • 1 cup thinly sliced carrots
  • 2 cups instant brown rice, uncooked
  • 1 tsp. lemon pepper seasoning
  • 2 Tbsp. KRAFT 100% Grated Parmesan Cheese

Directions

  1. HEAT dressing in large skillet on medium-high heat. Add chicken; cook and stir 1 min.

  2. ADD broth, broccoli, red pepper and carrots. Bring to boil.

  3. STIR in rice. Return to boil. Reduce heat to low; cover. Simmer 5 min. Remove from heat. Let stand 5 min. Stir in lemon pepper seasoning; sprinkle with cheese.
