Katherine’s Pot Roast

inspired by Elise’s Simply Recipes, but she wouldn’t recognize it

Prep time: 15 minutes
Cook time: 240 minutes
Serves 4 people

  • 3-4 lbs boneless chuck roast
  • salt
  • pepper
  • Italian seasoning
  • 1 T. olive oil
  • 2 t. minced garlic
  • 1 can beef broth
  • 2 packages stew vegetables (carrots, potatoes, celery, onions), frozen


  1. Heat oil on medium-high heat in large pot.

  2. Cover roast in salt, pepper, and Italian seasoning, and sear 5 minutes on each side.

  3. Add garlic, beef broth, and frozen vegetables.

  4. Cover and cook on extremely low heat for 4+ hours.
