Blueberry buttermilk muffins

Ingredients

  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 2 eggs, large
  • 1 cup buttermilk
  • 3/4 cup white sugar, plus extra for topping
  • 1/2 cup vegetable oil
  • 1-1/2 tsp vanilla extract
  • 1-3/4 cup frozen blueberries

Directions

  1. Preheat oven to 400F.

  2. Grease a standard 12-cup muffin tin, or line with paper cups.

  3. In a large bowl, combine flour, baking powder, salt, cinnamon, and nutmeg.

  4. In a small bowl, combine eggs, buttermilk, sugar, oil, and vanilla.

  5. Add the egg mixture to the flour mixture and mix until moistened. Do not overmix.

  6. Fold in the blueberries.

  7. Divide batter between the muffin cups. Sprinkle liberally with white sugar.

  8. Bake for 15-20 minutes or until toothpick inserted into the center of the muffins comes out clean. Serve warm.
