Light and fluffy silver dollar pancakes

Ingredients

  • 1 cup all-purpose flour
  • 1/3 cup cake flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 tbsp white sugar
  • 2 egg yolks
  • 1 cup milk
  • 1 tbsp butter, melted
  • 1 tsp vanilla extract
  • 2 egg whites, at room temperature

Directions

  1. Sift together flours, baking powder, baking soda, salt, and sugar in a large bowl. Whisk together egg yolks, milk, butter, and vanilla in a small bowl, and pour into dry ingredients. Stir until throughly combined.

  2. Beat egg whites to soft peaks and fold into batter. Make sure there are no streaks of egg white remaining.

  3. Heat a nonstick skillet or griddle (grease with butter if not nonstick) over high heat and drop batter into 2-inch rounds. Cook 1-2 minutes per side, or until golden brown. Turn down the heat slightly if the pancakes cook too quickly.

  4. Serve immediately.
