Tofu Mayonnaise

The oil can be left out of this recipe to make it low in fat. It has plenty of protein on a whole grain bread, so it completes sandwiches well with simply sliced vegetables.

Ingredients

  • 1 1/2 pounds tofu
  • 2 Tablespoons tahini
  • 1 teaspoon dill seed
  • 1/4 cup vinegar
  • 2 Tablespoons prepared mustard
  • 1/2 teaspoon tumeric (optional)
  • 1/4 cup honey
  • 1/3 cup oil
  • salt to taste

Directions

  1. Whiz all ingredients in blender. Add milk if needed to desired consistency. Adjust the seasonings to suit your taste.

  2. Variation: for spicy Tofu Mayonnaise: add 1/8 cup wasabi powder, 1 drop chili oil, and a few drops tamari to each 1/4 cup Tofu Mayonnaise.

  3. Additional serving suggestion: with Split-Pea Spread and black olives on corn bread, with sliced cucumbers on oatmeal bread, with peanut butter and raisins and grated carrots on muffins, or with sliced tomatos in pita pockets.
