Copper Penny Carrots

Ingredients

  • 2 pounds carrots, cooked tender
  • 1 cup sugar
  • 1 can tomato soup
  • 1 cup cider vinegar
  • 1/2 cup oil
  • 1 onion, chopped in chunks
  • 1 green pepper, chopped in chunks
  • 1/2 pound fresh mushrooms, cut

Directions

  1. Mix sugar, soup, vinegar, and oil together.

  2. Add veggies.

  3. Let sit in fridge for at least 2 hours before serving.

  4. Excellent flavor – Marinated.
