Light Chicken Cordon Bleu

Ingredients

  • 4 fresh boneless, skinless chicken breast halves
  • 1/2 cup cubed fully cooked ham
  • 1/2 cup shredded, reduced fat Swiss cheese
  • 1/8 teaspoon minced garlic
  • 2 tablespoons chicken broth
  • 1 carton (8 ounces) reduced fat plain yogurt
  • 1 tablespoon milk
  • 1 cup crushed seasoned bread crumbs

Directions

  1. Cut a slit in each side of each chicken breast to form a pocket.

  2. In a small bowl, combine ham, cheese, garlic, chicken broth, salt and pepper.

  3. Stuff each pocket with 1/4 of filling.

  4. Secure with toothpicks

  5. In shallow dish, combine yogurt and milk.

  6. Dip each chicken breast in yogurt mixture; turn to coat.

  7. Roll in bread crumbs.

  8. Place in greased 13 × 9 backing dish.

  9. Bake at 350 degrees for 45 minutes or until juices run clear.
