Mum’s Hommus

Prep time: 90 minutes

Ingredients

  • 250g chick peas
  • salt
  • pepper
  • 2 tsp cumin
  • 2 large cloves garlic, crushed
  • 2 tbs tahini
  • 180ml fresh lemon juice
  • 70ml olive oil
  • 1 large pinch cayenne pepper

Directions

  1. Soak chick peas overnight or for a few hours in cold water

  2. Drain and simmer and fresh cold water until really soft (usually more than an hour) – adding salt towards end of cooking time

  3. Drain water and set aside

  4. Cool a little and put in the liquidizer with the rest of the ingredients

  5. Add enough of the cooking water to achieve a soft cream

  6. Decorate with a dribble of olive oil and sprigs of parsley
