Scalloped Potatoes Deluxe

Ingredients

  • 8 potatoes, boiled
  • 1/4 cup butter
  • 1/3 cup finely chopped onions
  • 1 pint sour cream
  • 1 1/2 cup shredded cheese
  • 1/3 cup corn flakes
  • 2 tablespoons butter
  • 1 can cream of chicken soup

Directions

  1. Peel, then grate potatoes.

  2. Heat 1/4 cup butter with soup.

  3. Blend in sour cream, onions, and cheese.

  4. Stir in potatoes.

  5. Pour into flat casserole pan (9 × 13) that has been greased.

  6. Melt 2 tablespoons butter; add corn flakes crumbs and sprinkle on top.

  7. Bake at 350 degrees for 45 minutes.

  8. Hints: Cook potatoes until only fork tender, not real soft,.

  9. You may add parsley flakes to corn flakes topping for added color and taste.

  10. Don’t use small potatoes.
