Yogurt cornbread

Ingredients

  • 2 eggs
  • 1/4 cup white sugar
  • 1 cup all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 2/3 cup cornmeal
  • 1/2 tsp salt
  • 1 cup plain yogurt
  • 1/4 cup butter, melted

Directions

  1. Preheat oven to 400F.

  2. Beat eggs, add sugar, and mix well.

  3. Whisk flour, baking powder, soda, cornmeal, and salt together.

  4. Add dry ingredients alternately with yogurt to egg mixture. Stir in cooled butter.

  5. Bake in a greased 10-inch cast-iron skillet for 25 minutes, watching closely after the first 15 minutes to make sure that it doesn’t burn.
