Citrus Turkey Salad

Ingredients

  • 1 pound Homestyle Oil Browned Turkey Breast, sliced
  • 2 cups Cabbage, shredded
  • 2 cups Mixed lettuce greens
  • 2 bunches green onions, diced
  • 1/3 cup Sunflower seeds, toasted
  • 1/3 cup Almond slivers, toasted
  • 16 ounces Mandarin orange slices, drained - reserve juice
  • 1 cup Olive oil
  • 4 tablespoons vinegar
  • 1/3 cup sugar
  • 3 tablespoons Mandarin orange juice
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 packages Beef flavored ramen Japanese noodles (with seasoning packets)

Directions

  1. Combine coleslaw and lettuce in a large bowl.

  2. Add onion, nuts and orange slices.

  3. Toss to mix

  4. Combine olive oil, vinegar, sugar, orange juice, salt, pepper, and contents of Ramen seasoning packets together in a separate bowl.

  5. Mix well.

  6. Sprinkle over salad and toss well.

  7. Divide greens among 4 salad bowls.

  8. Place 4 ounces Turkey Breast atop each salad

  9. Drizzle with crushed Ramen noodles
