Chicken Roma

  • 2 1/2 to 3 lbs chicken cut into serving pieces
  • 2 tbs olive oil
  • 1 can (14-16oz) whole peeled tomatoes undrained and chopped
  • 1/2 cups sliced pitted olives
  • 1 clove garlic finely chopped
  • 1 envelope beefy onion soup mix
  • 1/4 cup dry red wine or water


  1. Put the cut up chicken pieces in crockpot. Stir the tomatoes, olives, and garlic. Then add the beefy onion soup mix, blended with the wine and olive oil. Pour over the chicken in the crockpot and put on low for 5 – 6 hours.

  2. Serve with hot cooked noodles.
