Favorite Enchiladas

This is a good and easy enchilada recipe. Freezes well!

Prep time: 20 minutes
Cook time: 10 minutes
Serves 6 people

Ingredients

  • 1 lb. Ground beef
  • 1/2 t. salt
  • 4 T. chopped onion
  • 4 c. shredded cheddar cheese
  • 2 10 oz. cans Enchilada sauce
  • 2 T. chopped green chilies (canned)
  • 12 corn tortillas
  • Lettuce and sour cream for topping

Directions

  1. Put ground beef in a skillet and add onion and salt. Cook until all the beef is browned. Drain and stir in 2 c. of cheese and ¾ c. sauce and chilies. Set aside. Soften tortillas by placing in between paper towels and microwave on high for 30-40 seconds until hot (they will crack when you roll them if they aren’t warm enough). Spoon ¼ c. meat mixture down the center of each tortilla. Roll up and place seam side down in a microwave safe baking dish. Pour remaining sauce over filled tortillas. Cover with waxed paper and microwave for 5-6 minutes. Turn after ½ of time. (If you have a carousel in your microwave, you don’t need to turn). Top with remaining cheese and microwave uncovered at high for 1-½ minutes or until cheese melts. Garnish with lettuce and sour cream.
