Crusty Bread

This great bread has a nice crust and a firm body. Great for any uses

Ingredients

  • 2 pounds bread flour
  • 2 cups warm water
  • 2 tbsp instant yeast (I like SAF Red Instant)
  • 2 tbsp honey

Directions

  1. Put all the water, half the yeast, all the honey and 1/3 of the flour into a glass or plastic container.

  2. Mix together and let rise in your fridge for 8-12 hours.

  3. Put the remaining flour and yeast into your mixing bowl and add the pre-ferment to it.

  4. Mix with paddle until the dough comes together then switch to bread hook.

  5. Mix with the bread hook for 10-15 minutes making sure not to let the dough ride up the hook.

  6. Turn it out and rollit it into a ball.

  7. Place it in a lightly oiled bowl and let rise till doubled 1-2 hours. This is best done in the oven with a dish of hot water and the dor closed (and the oven OFF).

  8. After rise, turn out, divide and let rest for 15 minutes.

  9. Punch down the bread with your knickles till you have a rectangle. Fold the dough over in thrids towards the center and punch down again. Do this
