Coconut Cream Pie

Ingredients

  • 3 eggs yolks
  • 1/3 cup sugar
  • 1/4 teaspoon salt
  • 2 1/2 tablespoons cornstarch
  • 1 tablespoon melted butter
  • 2 cups scalded milk
  • 1 cup grated coconut
  • 1 teaspoon vanilla or tum
  • 1/4 teaspoon nutmeg
  • 9 inch pie shell, baked

Directions

  1. Beat egg yolks.

  2. Beat in sugar, salt, cornstarch, and butter gradually.

  3. Pour in milk and blend.

  4. Cook over boiling water, stirring constantly until thick.

  5. Add coconut and cool.

  6. Add flavoring and nutmeg and pour into shell.

  7. Cover with meringue and bake 15 to 20 minutes in 300 degree oven.
