Blueberry Jello Salad

Ingredients

  • 2 pkgs (3 oz) raspberry jello
  • 2 cups boiling water
  • 1 pkg (3 oz) cream cheese
  • 1 can (8 3/4 oz) crushed pineapple w/ juice
  • 1 can blueberries w/ juice (15 oz)
  • 1 pint whipping cream, whipped
  • 2 bananas, sliced

Directions

  1. Dissolve jello in boiling water.

  2. To keep cream cheese from getting lumpy, add jello to it a little at a time and beat it well each time until cream cheese is fully incorporated.

  3. Add pineapple and blueberries with juices.

  4. Let partially set.

  5. Fold in one-half of the whipped cream.

  6. Pour into a six-cup ring mold and chill until set.

  7. Unmold and fill center of mold with the rest of the whipped cream and sliced bananas.
