Vegetable Burgers

Serves 8 people

Ingredients

  • 2 medium carrots, peeled and grated
  • 1 medium zucchini, grated
  • 1 medium onion, chopped
  • 3/4 cup chopped cremini or button mushrooms
  • 3/4 cup roughly chopped cashew nuts
  • 1/2 tsp dried oregano
  • 1 tbsp chopped fresh parsley
  • Pinch cayenne pepper (optional)
  • 2 cups fresh whole grain bread crumbs
  • 1 tbsp tomato paste
  • 1 1/2 tsp soy sauce
  • 1/2 lightly beaten egg
  • salt and pepper
  • vegetable oil

Directions

  1. Using your hands, squeeze out some of the excess moisture from the grated carrots and zucchini

  2. In a large bowl, mix together the vegetables, cashew nuts, herbs, cayenne pepper, and 1 cup of bread crumbs

  3. Beat together the tomato paste, soy sauce and egg; stir this into the vegetable mixture and season

  4. Using your hands, form the mixture into 8 burgers and coat with the remaining 1 cup bread crumbs

  5. At this stage you can set the burgers in the refrigerator to firm up, but it is not essential

  6. Saute the burgers in vegetable oil, turning occasionally, until golden
