Curried Chicken and Fettucine

Ingredients

  • 4 boneless skinless chicken breast halves
  • 2 teaspoons curry powder
  • 1/8 teaspoon cayenne pepper
  • 3 tablespoons margarine or butter, divided
  • 1 1/2 cups of thinly sliced carrots
  • 1/2 cup milk
  • 1 package Pasta Roni fettuccine Alfredo; includes pasta and special seasoning pack
  • 1/4 cup chopped cilantro or sliced green onions

Directions

  1. Sprinkle chicken with curry powder and cayenne pepper.

  2. Cook chicken with 1 tablespoon margarine in large skillet over medium heat 5 to 6 minutes on each side or until browned.

  3. Remove from skillet; set aside

  4. Cook and stir carrots with remaining 2 tablespoons margarine in same skillet 2 minutes.

  5. Add 1 1/4 cups water, milk pasta, and special seasoning packet.

  6. Stir and bring to a boil.

  7. Place chicken over pasta.

  8. Return to boil.

  9. Reduce heat to medium.

  10. Gently boil uncovered 5 to 6 minutes or until pasta is tender and chicken is no longer pink in center, stirring occasionally.

  11. Sprinkle with cilantro.
