Potato chip cookies

Serves 60 people

Ingredients

  • 3/4 c unsalted butter
  • 1 c light brown sugar, packed
  • 1 c sugar
  • 2 large eggs
  • 1 t vanilla
  • 2 c flour
  • 1/2 t salt
  • 1 t baking soda
  • 2 c crushed potato chips
  • 1 c chocolate chips

Directions

  1. at oven to 350.

  2. Beat the butter and sugars together, using an electric mixer set on medium-high speed, until light and fluffy.

  3. Reduce speed to medium and beat in the eggs and vanilla.

  4. Reduce speed to low and mix in the flour, salt, and baking soda.

  5. Gently stir in the potato chips and chocolate chips.

  6. Drop the cookie dough by tablespoonfuls, about two inches apart, onto ungreased baking sheets.

  7. Bake for 14-16 minutes.

  8. Let cool on baking sheets for two minutes.

  9. Transfer the cookies to a wire rack to cool completely.
