Gingerbread waffles

Serves 12 people

Ingredients

  • 2 c flour
  • 1 t baking soda
  • 1 t baking powder
  • 1 t ground ginger
  • 1/2 t cinnamon
  • 1/4 t cloves
  • 2 t minced fresh ginger
  • 1/4 t salt
  • 1/4 t freshly ground pepper
  • 2 large eggs
  • 1/4 c sugar
  • 1 c milk
  • 1/2 c molasses
  • 6 T butter, softened
  • 2 T vegetable oil
  • 1 T fresh lemon juice

Directions

  1. Sift together flour, baking soda, baking powder, ground ginger, cinnamon, and cloves; stir in fresh ginger, salt, and pepper.

  2. In a separate bowl, whisk together eggs, sugar, milk, molasses, butter, oil, and lemon juice until well blended.

  3. Add egg mixture gradually to flour mixture, whisking until well blended.

  4. Cook in a preheated, lightly greased waffle iron according to manufacturer’s instructions until golden.
